Mini bites...!!




Yummy is the word i can say for this.... kids love this...and so do adults...

This was an instant hit with the kids who visited our place for lunch.....it was first time someone was coming to my place for lunch after my wedding.... and i was quite nervous about the menu.... well my hubby was very supportive he cleaned the whole house while i looked into the kitchen. As they were south indian guest and our uncle and his family... i prefered to stick to the root.... so I made, Aloo tikki chaat and these mini bites for appetisers, main course consisted of steamed white rice,Dumstick sambar, Tomato Rasam, cauliflower and matar sabji , chana masala and phulkas. The desert was Malai kulfi ice cream.
The idea for these mini bites stuck me in the morning when I was just wondering if those kids, 11 and 7 years of age..born and brought up completely in US....would be able to eat the spicy chaat (even though i had reduced the spice....i was not sure.. if they would like it..)

And you know what i was right... they just took a spoon ful of the chaat and kept it aside.... but loved the bites...i made two batches of 21 pieces each and by the time they left i was just left with 4 pieces. So atlast my efforts paid off...

So here goes the reipe of these tempting and lipsmacking mini bites....this is my own recipe...tried my hand at something new and it clicked...hehe...Okie iam not giving quatities of the vegetable as I made it with wtever was available. And also add and decrease the amount of a particular vegetable or sauce according to ur choice.... you can also add up flovoured jelly instead of tomato ketchup and mustard and add pineapples.... it tastes yummm...so u can mis match the flavours accordingly to make the bites that ur mouth likes to bite in....

You need:

white or brown bread - 10-12 pieces
Tomatoes -sliced into rings and then furter made into quater size discs..
onions -cut lenghth
Capsicum - cut lenghtwise (discard the seeds)
Mushroom (optional)
Mayonaise
Butter
tomato ketchup( you u may also try it with maranara sauce.)
Mustard sauce...(just for taste)
Shredded parmesan chesse or grated mozerella chese
salt
crushed black pepper
Method :
Take the slices of the bread on the big plate. Bunch the slices in to 4 and cut then into quater size pieces. Arrange them on a pizza baking tray.


Apply some butter to all the pieces and reverse them... so that the butter side touch the plate.

Now , you can load up the bite with ur toppings.... firstly apply some tomato ketchup ( i used ketchup as I was making it for kids and it will be a bit sweeter compared to maranara sauce.

then spread the mayonaise on top.... put a small blob of mustard on it.. now top it with the tomatoes, onions, capsicum and mushroom........




Now garnish it with cheese - i used both shredded parmesan and a small piece of stick mozarella... sprinkle a bit of salt and pepper on top and bake it for around 10-15 mins at 375 degrees F heat.... keep checking of the melting cheese.... dont keep it too long or the base of the bread will get burnt.

Serve it with potato chips and tomato ketchup..:)

This was really awesome!!i tried it yesterday itself.My kid just adored this!! this morning she wanted the same as the lunch for the school.i thought she will be bored of eating .then i promised her i will make some in the evening again.then she was very happy!!Thanku very much for such a beautiful recipe.

Hey Shubha I tried this today with little alteration.
Made with burger bun.Added some finely chopped raw mango pieces and corn.It was colorful and yummy-yummy :)Thanks for the idea!
