Experimenting with Pineapple Kesari


Pine apple kesari.. for the sweet tooth..
Well Pineapple is not something i have liked a lot.....its one fruit i dont prefer to eat much..... well maybe coz we never used to get pineapple at home.... so i have rarely seen this fruit.... forget making some delicacy with this fruit... hmmm...

But as i said earlier "marriage" changed me..... my husbad loves pineapple and thats how i ended up making this kesari/ sheera and loved it.. sharing the recipe with u...

For making this kesari u need:


Pineapple fruit chopped into small cubes- 1/2 cup
Semolina / Rava - 1/2 cup
Sugar - 1 cup
Ghee - 1 Tbsp
Raisins & chopped Cashews - 1 tbsp
Elaichi / cardamom Powder - 1/4 Tsp
Pineapple essence - 1/2 tsp (optional)
Yellow food color - a little (optional)
Method.:
Cook pineapple in 3/4 cup of water in a Microwave. Mean while, in a kadhai or an pan dry fry the rava on low flame with constant stirring, till it starts to turn light brown. You can actually feel the sweet smell of the cooked rava...Keep it aside.Boil a cup of water in a saucepan or a small wok. Add sugar, cardamom powder, food color ( i didnt food colour as i didnt have it... yet it did come out good..)and the essence to it and stir once or twice till the sugar completely melts. See that the mixture becomes slightly thick.Then turn down the stove to low and add the cooked pineapple and the Rava(semolina). Stir the mixture well so that there are no lumps and the mixture becomes smooth in texture. Cook till the semolina is done.Heat ghee in a small pan and add cashews and raisins. Toast them till cashews turn golden brown and raisins turn plump. This step takes less than a minute.Add the fried dryfruits to the kesari and mix well.Serve warm.
