Sweet Corn Vada

This recipe was taught to me by my mother-in-law. So i dedicate this post to my sweet mom in law, who is in hyderabad. This is an amazing recipe which gets out the taste of the corn so well. My mom in law is one person who rarely uses the hot masalas... Her ingredients mainly consist of salt and turmeric alone, and the wonders she creates with it. Woooww.... I was lucky enough to learn a the basic everyday andhra cooking from her, that too the authentic way.... just getting the flavour of the vegetables...:) my hubby loves her cooking and so do I:)..... so amma here i dedicate this post to u and ur lovely cooking.

To make these vadas u need:

Fresh corn kernels - 2 cups
Green chllies - 3
sugar - 1/2 tsp
jeera - 1 tsp
peanuts - 1 tbsp (optional)
Maida - 3tsp
Salt to taste
Oil to deep fry

Mix all the above ingredients in a blender (except the oil) and grind into a coarse paste. You may add very very little water... this paste should be a bit thick and not watery. Keep this mixture aside for 5-10 mins.

Now heat oil in a kadhai or thick bottomed pan. Make small flat disc of the corn mixture and fry it in the oil till golden brown in colour.

P.S : Even if the corn is sweet do add the sugar, dont skip that step. The sugar makes the corn to leave its water which makes no need to add extra water.



Serve hot with mint chutney.

Hi Shubha. Looks yummy. Sure it shud be tasting yummy too. How many vadas can be made with the measurements you gave? I am planning to make this vada for about 75 people for Diwali party. Not really sure about the measurements. Can you help me please?

Hwllo padma thanx for ur comments.. This measurement will yield around 20 or less than 20 vadas.... depending on the size u make....:) enjhoy ur party..:D i Cudnt message u back...so posted it here.
